Kim Päivästö’s uses the very best ingredients from various sources. For him, the most important aspect of cooking is ensuring that every dish is as delicious as possible. He sources top-quality ingredients both locally and from further afield, including France and Asia. His cooking style is a blend of classic French, Scandinavian, and Asian influences, with a focus on small details and clear, distinct flavours. Originally trained as a pastry chef, Kim's expertise in techniques and attention to detail are evident in all his cooking.
Kim has spent 17 years working in kitchens across Europe, gaining invaluable experience in some of the continent’s most esteemed establishments. His career includes time at Gordon Ramsay’s Michelin-starred Petrus in London, as well as in Switzerland and at the three-Michelin-starred Hertog Jan in Belgium. In Finland, he has made his mark as the head chef at notable restaurants such as Michelin starred Demo and Inari. His exceptional skills were recognised when he won the title of Finland’s Chef of the Year in 2021. Currently, Kim works as a freelancer in Tallinn and Finland, continuing to create innovative dishes that reflect his diverse influences and commitment to quality.
