Meet Chef Jouni Toivanen


Jouni Toivanen is known for earning a Michelin star for his restaurant Luomo, and his innovative way of cooking. His food philosophy is rooted in the present day and its techniques, while he also respects old culinary traditions and values the purity of ingredients. He has gained experience working in a variety of restaurants, from Michelin-starred restaurants in Helsinki, Barcelona, Seoul, and Hong Kong. He places great importance on sustainability, nature, modern techniques, and simplicity, always aiming to deliver a pure, surprising, and enjoyable dining experiences.

His career as a chef spans three decades and includes several different restaurants. One of the highlights was the opening of his own restaurant, Luomo, which earned a Michelin star just nine months after its launch. Throughout his time in various restaurants, he has developed his own approach to cooking, primarily based on local ingredients and a modern perspective, while drawing inspiration from cuisines around the world. Preserving the flavour of food is central to his cooking, which involves respecting ingredients and proper preparation.

He has transitioned from the role of a restaurateur to various other projects. He has worked as a restaurant consultant, designed advertisements, served as a journalist, participated in product development in the food industry, and conducted cooking classes, including those on wild herbs. He has also authored cookbooks; "Viettelevät villiyrtit" and "Vuosi Luomoa".
