Meet Chef Eliza Parchanska

Since Eliza was small she would look for an excuse to cook and gather people together. That's something she still does to this day. She loves feeding people. She loves watching people meet and eat, and making them feel good.

In Eliza’s family everyone loved food as long as she can remember.

She likes to think of her cooking style as local. It depends on where she is and what is available at the local market. It is surely Polish with Mediterranean influences as she lived in Spain for ten years. She’s been influenced greatly by the hospitality of those cultures. She likes food that is rustic and beautiful at the same time, and always delicious. It depends on what her body needs at particular times of the year.

It's the little things that make something amazing. Eliza doesn’t think she’s very technical at her cooking, she intuitively knows which little things make the difference.

Her cooking style isn’t defined. Instead, Eliza believes in improvisation, creating plates as she is cooking. That's how she usually gets the results she enjoys the most.
